I was craving salty snack this weekend but was really trying to be good and eat healthy. So I decided to make this Mock Salmon Pate recipe that I got from a vegan dips and deserts class. This is my version of the recipe.
1 cup raw walnuts
2 stalks of celery
1/2 of a red pepper
1 tsp salt (to taste)
1 Tbl nori rice seasoning*
* You can find this in the japanese section of your grocery store (picture below)
In a food processor add all the ingredients and pulse until just slightly coarse. You may need to stop the food processor a few times to scrape down the sides.
Serve on a cracker
