Cinnamon Buns

This is my favourite cinnamon bun recipe. I was given this recipe years ago on a piece of paper. When I want to make cinnamon buns I search my house high and low for this recipe because the piece of paper is the only copy I have. So I have decided to post it here so that I can always find it. The other benefit is that I can share it with all of you.

Dough
1 cup milk (regular, soy, or nut milk)
1/3 cup sugar
1/2 tsp salt
1/2 cup shortening / cooking oil
1 tsp sugar
1/2 warm water
1 Tbs yeast (quick rise or traditional)
1 egg, beaten
4 1/2 flour

Directions
Scald milk (50-55C), add sugar, salt and shortening/oil. Pour into mixing bowl.

If using traditional yeast, dissolve sugar in warm water. Add yeast and stand for a few minutes until the yeast foams. If not using traditional yeast, skip this step and add the yeast directly into the mixing bowl with the scalding milk mixture.

Add beaten egg into the yeast mil mixture and stir well.

Add two cups of flour and mix well with the paddle attachment.

Add remaining flour and mix until the dough starts to form.

Change the attachment to the dough hook and knead for 15 minutes.

Test the dough. It should be soft and moist but not stick to your finger. If it sticks to your finger add a bit more flour. If it’s too dry add a bit of milk.

If using traditional yeast. Grease a bowl and let rise for 1 hour. Wet a towel and cover the bowl to prevent the dough from drying out. Place bowl in a warm location.

If using quick rise yeast, just take the dough and roll it out in a rectangular shape.

Brush the rolled dough with butter/margarine. This will make it easier to smooth the filling on the dough.

Filling
2 Tbs butter / margarine, melted
2 cups brown sugar
1 Tbs cinnamon
1/2 butter / margarine
1 cup whipping cream (optional)

Directions
Combine the brown sugar, cinnamon, butter/margarine, and melted butter/margarine until smooth.

Spread the cinnamon mixture evenly across the dough.

Roll the dough, cut evenly, and put in a baking pan.

Cover the baking pan with a wet towel and let rise in a warm location for 20-30 minutes or until double in size. If the room is cold, one way to get a warm location to let the dough rise is to turn the oven on to 200C until warm. Turn off the oven then put the baking pan in and let the dough rise.

Once the dough has risen, add the whipping cream to the bottom of the pay.

Preheat oven to 350C.

Bake for 20min until lightly brown.

Serve with cream cheese icing if desired.
