Lemons…the tart taste of lemons just can’t be beat. I wanted to make a lemon loaf that had a tart with a strong taste of lemon. I decided to try and make a lemon cake mix / lemon pudding mix to see what it tasted like. So I used my go to cake mix recipe. Turned out fantastic! I kept getting requests to make more. I hope you like it as much as I did.

1 package lemon cake mix
1 package lemon pudding mix
1 cup sour cream
1/2 cup grape seed oil
1/2 cup apple sauce
4 eggs, beaten
1/2 cup warm water

Directions
Preheat oven to 350 degrees F (175 degrees C).

In a large bowl, mix the beaten eggs, water, oil and sour cream. Slowly mix in the cake and pudding mixes.

Lightly grease two loaf pans.

Pour the batter into the loaf pans

Bake for 20 minutes, or until top is springy to the touch and a wooden toothpick inserted comes out clean.
