The first time I tried this recipe I was sceptical, I did not like cauliflower. Most cauliflower I had eaten was bland and mushy. But when this came out of the oven, I started popping these like candy. I hope you enjoy these as much as I did.
1 head cauliflower, trimmed and cut into florets
3 large cloves garlic, minced
1/4 cup olive oil
1/2 tsp salt
1/4 tsp lemon pepper
4 Tbs curry powder
1 tsp onion powder
parsley, chopped (optional)
cilantro, chopped (optional)
1 lemon, juiced
Preheat an oven to 450 degrees F (230 degrees C).
In a large bowl, mix cauliflower florets with garlic, olive oil, salt, lemon pepper, curry powder, and onion powder.
Toss cauliflower mixture to coat and spread into an even layer onto a cooke sheet.
Roast in preheated oven for about 1 hour. Occasionally mix the cauliflower, and continue roasting until the tops of the florets are a little burned.
Sprinkle parsley, cilantro and lemon juice over the cauliflower before serving.
