I have a huge rhubarb plant in my garden and had no idea what to do with it. I decided to make rhubarb syrup to go with my soda stream. I had no idea what it would taste like, but it turned out delicious and refreshing. I hope you like it.

3 cups fresh rhubarb stalks, sliced into 1-2 inch pieces
1 vanilla bean, split
1/2 lemon, sliced
1 cup sugar
4 cups water, or enough to cover the rhubarb

In a pot add the rhubarb, vanilla bean and pod, lemon, and sugar. Add enough water to cover the rhubarb, about 4 cups. Boil then simmer for about 15 minutes until the rhubarb is mushy. The rhubarb should be the consistency of the image on the far right.

Let the syrup cool and then strain it into a bottle.

When you’re ready to drink, put a little into your glass and mix with sparkling water. Home made rhubarb pop and healthy too.

*Save the vanilla pod, wash and put into a jar of sugar to make vanilla infused sugar. Save the remaining rhubarb to eat with yogourt or by it self. It’s delicious!
