I want waffles! So waffles for breakfast it is… well brunch by the time I actually got up to make them. I got this awesome waffle recipe from a friend, but I had to hunt through my email to find it, so I decided to post it here, so that I won’t have to go searching the next time I want to use the recipe. These waffles come out crunchy and fluffy. So good! I hope you enjoy.
1 1/3 cup flour
2 Tbs sugar
1 Tbs baking powder
1/4 tsp salt
2 eggs
1 3/4 cup milk (or non-dairy milk)
1/2 cup oil
1 tsp vanilla
Mix
Mix dry ingredients in one bowl. In another bowl, beat eggs and add other wet ingredients into the bowl with the eggs. Pour the wet ingredients all at once into the dry ingredients. Stir until just moistened. Batter will be slightly lumpy.
Cook
If you want crispy waffles, pre-heat your waffle iron on high. If you want it soft, turn your waffle iron to low or medium.
