My favourite lemon curd recipe. It’s so easy to make and makes me happy!
1/2 cup white sugar
1 cup fresh lemon, juiced (about 4-5 lemons)
3 lemons, zested
1/2 cup unsalted butter, melted
In a microwave-safe bowl, whisk together the sugar and eggs until smooth.
Stir in lemon juice, lemon zest and butter.
Cook in the microwave for 30 second intervals, stirring after each interval until the mixture is thick enough to coat the back of a metal spoon.
Remove from the microwave.
- Store for up to three weeks in the refrigerator.
- If you over cook the mixture, or forget to stir, you can run the mixture through a fine sieve to remove the bits of cooked egg.
