I saw a photo on the internet for a Pesto, mozzarella, baby spinach, avocado grilled cheese sandwich and have wanted to try a version of it ever since. It was as yummy as I thought. I’ve been eating it all week!

Bread, 2 pieces
Mozzarella, 2 slices
Heat a frying pan on low
Spread pesto on one side of each slice of bread. Lay mozzarella on each slice of bread on top of the pesto.
Open avocado in half and remove seed. Using the knife, slice the avocado into thin strips. Spoon half of the avocado on top of one piece of bread. Approximately half of the avocado per sandwich, depending on the size.
Lay the slice of bread without the avocado to close the sandwich, and spread margarine on both outside sides of the sandwich.
Put the sandwich in the heated frying pan and leave until the cheese has melted and the bottom side has browned. Flip and do the same.
