Corn Chowder

What to cook for dinner? Soup is always the go-to meal especially in winter. This is one of my favourites.

1 Tbs olive oil
1 onion
3 stalks celery
2 potatoes
1 can creamed corn
1 can sweet corn, un-drained
1 Tbs Thyme
2 bay leaves
3 cups chicken broth (or enough to cover)
2 chicken breasts, cubed
1 cup soy milk
Salt to taste
pepper, ground to taste
water
3 Tbs corn starch

In a Pot
Sauté the onions in the oil until tender. Add broth, potatoes, celery, thyme, bay leaves, corn and creamed corn and bring to a boil. Once boiling turn down the heat to low and add the chicken. Cook on low for about 1/2 hour or until chicken is cooked and vegetables softened. Add milk and simmer for another 5 minutes. In a small bowl mix the water and corn starch, add one spoon at a time until desired consistency. Add salt and pepper to taste.

In the Slow Cooker
When you’re short on time, cooking soup in the slow cooker is great.

In the slow cooker, add the onions, potatoes, celery, creamed corn, corn, thyme, bay leaves, chicken, and enough broth to the cover all the ingredients. Cook on the low setting for 8 to 9 hours. Stir in the milk and water cornstarch mixture and cook for another half hour. Add salt and pepper to taste.
