What to do with fresh pumpkin? Usually I use pumpkin that is in a can! I wanted to make butternut squash soup but I only had pumpkin and had to figure out what the do with all the fresh pumpkin I had in my pantry. So butternut squash with pumpkin is the result.
olive oil
1 medium onion, chopped
3 small pumpkins, peeled, seeded and chopped
3 medium carrots, peeled and chopped
1 large apple, peeled and chopped
vegetable broth
salt and pepper
parsley, chopped
Tip
How to peel pumpkins without hurting yourself… With a sharp knife stab the pumpkins all the way around to create vent holes. This will prevent the pumpkin from blowing up. Microwave the pumpkins for about 5 minutes. The pumpkins will now be MUCH easier and safer to peel, seed and chop.
Directions
Add olive oil to soup pot and sauté onion.
Add chopped pumpkin, carrots and apples.
Add enough broth to just cover the vegetables and simmer until the vegetables are soft.
Use an emersion or standard blender until smooth. Pour the soup back into the pot, and add salt and pepper to taste.
To serve, garnish with parsley.
I made this with my last kabocha squash. So good!!
